5 artichokes, leaves removed
2 lemons, cut in half
4 tablespoons extra virgin olive oil
1 tablespoon of dried mint
50 gr İçim Kashkaval Cheese
Salt & Freshly ground black pepper
Chop the artichokes. Squeeze the juice of one lemon and place it in a bowl of water. Whisk the remaining lemon juice and olive oil in a salad bowl. Drain the chopped artichokes from the lemon water on paper towels, add them to the salad bowl and toss gently to coat them with the dressing. Sprinkle the dried mint and mix the salad again. Season with salt and pepper to taste and serve with thinly sliced İçim Kashkaval Cheese.
