Vegetable Pancake Recipe

Ingredients

(For 6 People)

For pancakes
150 ml İçim Milk
125 g flour
35 gr İçim Butter
1 egg
½ teaspoon baking powder
1 tablespoon fresh thyme leaves, finely chopped
Salt

For the filling
150 ml İçim Chief Cream
100 g spinach, chopped
100 g red pepper
1 spring onion, finely chopped
Extra virgin olive oil
Salt

Preparation

For the pancakes, beat the egg with a pinch of salt. Add baking powder and 30 g İçim Butter into the flour and mix. Add to the beaten egg.

Slowly add İçim Milk to the mixture. Keep stirring until you get a slurry with the consistency of grits. Add 1 tablespoon chopped fresh thyme leaves and 1 teaspoon salt to the slurry. Boil the spinach and red peppers in boiling salted water for 4 minutes, cut them into small pieces and add them to the mixture. Add the spring onions and mix well again.

Grease a small pan with 5 g İçim Butter and heat it on the stove. Pour 1 ladle of the mixture into the pan. Cook for 2-3 minutes and then turn over. Cook the other side for 2 minutes and remove from the pan. Repeat the same process for 6 pancakes.
