Plain gelato
For the puree
240 g raspberries, chopped
50 g sugar
1 tablespoon lemon juice
Ice cream maker
Mix all the puree ingredients with a blender until homogenized. Strain through a fine-mesh strainer. Mix the prepared and cooled gelato with this raspberry puree. Pour the mixture into the ice cream maker and mix again until you get a medium soft consistency. Serve with the sauce you have prepared.
