250 gr İçim Strained White Cheese
200 gr İçim Milk
100 gr İçim Butter
750 g flour
3 eggs
125 g powdered sugar
1 teaspoon crushed gum
1 tsp dry yeast
1 tsp mahlep
Set aside the dry yeast with 1 teaspoon of sugar and 50 g of milk for 5 minutes. Place 500 g of sifted flour in a large bowl. In the middle, add the 3 beaten egg yolks, the cottage feta cheese, the prepared yeast mixture and the powdered sugar. Melt the butter and add the rest of the milk. Blend the dough together with the milk while mixing. Mix the remaining flour with mahlep and mastic and add it to the dough. Grease a 25 cm wide cake tin. Place the prepared muffin dough in it. In this way, let it rise for 50 minutes without putting it in the oven. Then bake in an oven preheated to 170 degrees for 50 minutes.
