Leek Puree Recipe

Ingredients

( for 2 people )

1.5 cups beans (boiled)
350 g leeks
Olive Oil
Fresh thyme
Saffron powder
Salt

Preparation

Finely cut the leek and fry it in plenty of olive oil until it becomes completely transparent. Puree the boiled beans with a little water to a dense consistency in the belender.

If necessary, add salt and leeks and crush them a little in the belender without making the leek smooth, that is, leaving it particlety. Add fresh thyme, stir and serve, especially with seafood.
