Half a packet of fresh yeast
1 tea glass of water
3 cups flour
Half a tea glass of olive oil
1 tea glass of İçim Milk
1 egg
2 tbsp İçim Butter
1 teaspoon salt
1 teaspoon black pepper
For the filling
Half a kg of finely chopped leeks
200 gr. İçim Cottage Cheese
For Topping
Egg yolk
Sesame
1. Soak the yeast in water for 2-3 minutes.
2. Put the flour in a large bowl.
3. Add the risen yeast, olive oil, İçim Milk and 1 egg into the center.
4. Knead it well with your hands to get a soft dough. Set the dough aside to rest.
5. Meanwhile, prepare the filling. Mix the finely chopped leeks with 2 tablespoons İçim Butter, 1 teaspoon salt, 1 teaspoon black pepper.
6. After mixing, grate the İçim Cottage Cheese and add it into the leeks.
7. Divide the dough into four equal parts. Make 4 phyllo sheets about 20 cm wide.
8. Cut each phyllo sheet in half.
9. Spread the melted İçim Butter on the phyllo sheets.
10. Put the filling inside, roll it thinly, then roll it round like a bagel and place it on the baking tray.
11. Sprinkle them with egg yolk and sesame seeds and bake in an oven preheated to 175 degrees for 25-30 minutes. Bon appetit.
