100 gr İçim White Cheese
50 g fresh peas
35 g spring onion
15 ml extra virgin olive oil
4 eggs
Salt and black pepper
Boil water in a saucepan. Add the peas and boil for 2 minutes, remove from the water and drain. Chop roughly with a knife, reserving half a tablespoon for garnish. Grate İçim Cheese into a large bowl. Stir in the egg, peas and freshly ground black pepper. Put some olive oil in a pan and heat it. Pour in a quarter of your omelette batter and when it starts to firm up slightly, fold the omelette in half, moving the pan back and forth. Cook for about 5 minutes and remove from heat. Prepare 4 more omelettes in this way. Serve either layered on top of each other or garnished with individual pea pods.
