1 kilo watermelon, cored and cut into cubes
10 cherry tomatoes, halved
3 tablespoons lime juice
½ bunch of fresh mint
Olive Oil
Salt
Grease your tomatoes with olive oil. Grill very lightly on a preheated grill over high heat, juicy side down, for 2 minutes; remove to a separate plate and leave to cool. In a large bowl, mix the tomatoes, watermelon, lime juice and fresh mint. Season with salt and serve.
