4 egg whites
1 cup sugar
300 g dark chocolate, chopped
3 tbsp İçim Butter
5 cups İçim Chief Cream
1 cup chocolate wafers, crushed

Whisk the egg whites and sugar in a heatproof bowl over slightly hot water. The egg whites should not be cooked but slightly warmed and puffed. Whisk by hand for 3-4 minutes, then remove from the heat and whisk with a mixer until it triples in volume. Melt the butter and chocolate in a heatproof bowl while stirring. When completely melted and mixed, remove from heat and leave to rest. Whisk 2 cups of İçim Şef Cream until it becomes slightly stiff. Beat the egg whites into the warm chocolate mixture. With the help of a spatula, you can mix the mixture from bottom to top in a folding motion, while with your other hand you can rotate your bowl clockwise to ensure even mixing. Gently fold the whipped cream into the mixture in the same way until no white streaks are visible. Pour about half a cup of the chocolate mousse mixture over the tart dough and spread it evenly over the surface. Spread the chocolate wafers on top and then add the rest of the mousse mixture. Put the tart in the refrigerator. Beat the remaining cream and a pinch of salt with an electric whisk until medium stiff. When it reaches medium hardness, spread the whipped cream on top of the tart. Refrigerate at least overnight. You can decorate the top with shaved chocolate chips.
