Ingredients (for 4 persons)
300 gr İçim Strained Yoghurt
1 cup of pounded wheat
1 egg
1 teaspoon salt
2 tbsp İçim Butter
A pinch of mint
Soak the wheat in the evening and blanch it in boiling water for 10 minutes in the morning. Crack the egg into the İçim Strained Yogurt and whisk by adding water until it reaches the consistency of a thick buttermilk. Heat the prepared buttermilk in a saucepan and bring it to a boil. Add the boiled wheat into it. Season with salt and pepper. Continue cooking over low heat, stirring frequently.
In a small frying pan, melt the İçim Butter. Add mint in it and heat it by stirring fast for 1 minute. Serve the soup hot with this mint sauce on top while it’s hot.
